Mountain-fried Bluegill Recipe for Bluegill

Title: Mountain-fried Bluegill

Ingredients: -BLUEGILL FILLETS

EGG WASH

-eggs
-milk
-salt and pepper, to taste

COATING

-flour, or cornmeal
-cayenne pepper
-Creole seasoning
-Smoked Paprika
-Sweet Basil
-White Sugar
Directions: Have your bluegill fillets ready to coat.
Dip each fillet into egg wash as your oil (hopefully in a cast iron pot) is heating. After oil is hot, around 350°, dip into the coating mixture, "built" using your own preferences, and back into the egg wash. Coat them in the flour mixture once more, and put them into the oil, gently. Cook for around 5-7 minutes, or until they're golden brown, and flaky. Serve with tartar sauce, ketchup, or barbeque sauce. Enjoy.
Other Notes: The fresher the fillets, the whiter, and flakier the meat will be.
